Add this recipe >Before starting this Fig Fritters recipe, make sure you have organised all the necessary ingredients.
Wash the whole figs under running water. Split them into quarters, vertically.
Place the figs into a bowl and pour the castor sugar on top...
... then baste with rum and leave to macerate.
In a mixing bowl, pour the flour, salt and sugar and shape into a fountain.
Add the eggs in the centre.
Beat the eggs with a whisk, gradually incorporating the flour...
... and gradually pouring the milk to obtain a homogeneous consistency.
In a separate bowl, beat the egg whites until stiff peaks are formed.
Gently combine the beaten egg whites with the preparation.
Make sure you do not work the batter excessively.
Heat the deep frying oil to 180°C. Drain the figs and steep them in the batter.
Place the figs, small numbers at a time, in the hot frying oil.
Fry for a few minutes until golden, making sure the fritters are completely immersed.
When cooked...
... place the fritters on a paper towel.
Sprinkle with icing sugar before serving.
