Pectin NH is a natural fiber, ideal for pastry toppings and fillings
NH pectin is used in watery or fruity preparations to create a firm, shiny gel that boasts a pleasing texture. This pectin forms a reversible gel that can endure multiple cycles of melting and gelling without losing its superior qualities. Typically, the dosage ranges from 0.8 to 1.2% depending on the fruit pulp content, equating to about 10g per Kg of topping.

  • Composition: E440ii low-methyl ester pectin, E450i disodium diphosphate (max. 20%), sucrose or dextrose, E341iii tricalcium phosphate (max. 5%)*.
*Maximum P2O5 content: 11.93%.
  • Storage: Keep away from heat and moisture.
  • Best before: 24 months from the date of production.
