Dehydrated glucose syrup is a white powder produced by spray-drying a purified aqueous solution of nutritious saccharides obtained through the hydrolysis of starch. Known for its anti-crystallising properties, this atomised glucose adds texture to desserts and delicate confectioneries. It can serve as a partial sugar replacement in ice cream mixes, and is also utilized in the production of fruit jellies and nougatine, helping to reduce overall sugar content.

Applications:

• Pulled sugar: Use 350 g of glucose for every 1 kg of sugar.
• Ice cream and sorbets: Add 100 g of glucose per litre of milk or per kg of fruit.
• Nougatine: Mix 500 g of glucose with 1 kg of sugar.
