Add this recipe >Before starting this Almond Rich Shortcrust Pastry recipe, make sure you have organised all the necessary ingredients.
Place the soft butter into the stand mixer recipient...
... then add the icing sugar...
... almond powder...
... salt...
... liquid vanilla extract...
... beaten eggs...
... and the flour and baking powder.
Make sure you add the ingredients in the order mentioned above.
Combine in the stand mixer, starting at low speed then gradually increasing the speed...
... until the dough has a homogeneous consistency. Make sure you do not knead the pastry too much.
Set aside in the fridge during at least 30 minutes.

On the second time, I had a guest with a gluten allergy and decided to dare and substitute the flour in place of which I used a mix of ground hazelnuts, walnuts and almonds I ground myself and also added a little Amaretto di Saronno and I must say.... it was terrific. I did not add any sugar (for fear to make it too sweet with the Ameretto). I will definitely do both recipes over and over I am sure.
