Sharpening consists of reshaping the edge of the blade to its original. Why sharpen your knife? As the knife is used, more and more tiny teeth appear on the edge of the knife on both sides of the blade. They are invisible to the naked eye. With a knife sharpener you rectify this wear and tear from use.
There are many knife sharpeners.
The whetstone
It can be made of several materials, stone is an effective solution, as it is abrasive. It is usually sold with a base for safe use. This technique provides a perfect and long-lasting result thanks to the abrasiveness of the stone grain, the possibility of getting as close as possible to the needs of your knife (you choose the type of grain that best corresponds to your knife) and the ease of storage. However, it is a method that requires precise know-how, which is why it is not recommended for beginners.
The electric or manual sharpener
The electric or manual sharpener is quick to use and does not require any special know-how, so it is within the reach of everyone. Be careful though, as it is not suitable for all types of knives, and the result will be less fine than with other tools such as stone.
The sharpening steel
It works for all knives and is easy to store and use, so it is suitable for everyone. However, the result is less durable than stone since it does not restore the edge of the blade but only straightens it.
How to use a sharpener?
Hold the knife at a 20 degree angle to the knife sharpener you have chosen and sharpen the blade along its entire length. Sharpen them before each use.
