Cut strips of barding to the size of the piece of meat to be wrapped.
Cover the piece...
...and tie up starting with a horizontal turn around the whole length.
Continue to tie up the length, leaving regular spaces between turns.
For each turn, make a loop with the string, pass the piece of meat through the loop and pull to tighten.
Repeat the process over the whole length and finish with a bow. Store in the fridge.
