This baking tray is a new revolutionary system that allows you to bake thin sheets of flaky dough to a thickness that will not exceed 1cm.
This puff pastry baking tray is composed of two perforated aluminium sheet pans with a thickness of 1.4 mm.
The reduced dimensions are perfectly suitable for home kitchens.

Use instructions:
Before the first use, remove the packaging. Wash with hot soapy water then wipe gently
to dry.
Use in an oven and place on top of a grid shelf.
Deep-freezer safe.
After each use, hand wash gently with a non-abrasive sponge.
No greasing required.
There is no need to prick the puff pastry with a fork or roller docker before baking.

Puff pastry baking tray

I bought the medium sized tray to use in the Rational oven. It does not fit in the slots for trays, so you have to put the tray on top of the tray slots.
It gives the puff pastry a nice even bake and the top layer comes out flush and super clean. I normally used baking and the centre would sink after baking. This tray gives a consistent finish. It would be great if they also sold rings that fit inside the tray as an accessory. At the moment I am making puff pastry discs, so would love to use a perforated ring, that fits inside the tray.
