Harvested directly from the tree, gum arabic is the hardened sap of various species of acacias.
It is used in the food industry as a stabilizer and emulsifier.
Edible, it is harvested mainly in tropical and subtropical regions, especially in Africa (Senegal, Sudan, along the Nile) and in Australia.
It serves as a binder and emulsifier for oriental pastries (Turkish delight, gazelle horns, feqqas) but also for confectionery, marshmallows and cake batters.
