This food additive is used in a wide variety of applications:

Thickening agent
Antioxidant
Stabilises foams
Improves stability and shelf like of biscuits

Recommended quantity: 1 to 3 grams per kg in biscuit making, 1 to 5 grams per kg for margarine and 3 to 5 grams per kg for chocolate.
