Clarance grain mustard is made from seeds grown, harvested and ground on site with a stone mill, on the family farm.
These seeds come from a plant called Brassica Juncea.
Flowering begins in May and the harvest takes place during the summer.
This variety gives a flavor that is both delicate and powerful with grains left whole for a slightly crunchy, old-fashioned texture!
Combined with cider vinegar and a producer's white wine, this produces an exceptional grain mustard.
It is excellent as an accompaniment to meats, cold cuts, fish, but can also serve as a base for making homemade sauces, marinades or mayonnaises.
To be tested with a grilled rib of beef and particularly recommended to spice up vinaigrettes.
Also ideal for a tomato or vegetable tart base.
