The almond oil, derived from a medley of French almonds such as Ferragnes, Ferraduel, Lauranne, Mandaline, and Ferastar varieties, stands out with its exceptionally rich flavor reminiscent of buttery, slightly roasted notes of almonds.
The process begins with delicately grinding the almonds under a flint or granite millstone, adapting to their distinct hardness to create a smooth paste. Subsequently, this paste undergoes slow roasting in a cast-iron pan, imparting its characteristic taste akin to roasted almonds. Finally, during the extraction stage, hydraulic pressure is applied to extract the oil from the paste.
