Using a small palette knife, spread the glucose syrup into several round shapes on a Silpat baking mat...
... making sure there is enough space so they don't touch.
Slide the silicone mat onto a baking sheet. You can stop here if you wish to create non-coloured decorations.
Add a couple of drops of liquid colouring (in any colour of your choice) directly on the glucose syrup discs.
I used red and green for this recipe. Make sure you're using water-soluble liquid colouring.
Slide the silicone mat onto a baking sheet.
Bake in a preheated oven at 150°C (gas 2)...
... preferably on the middle rack.
If you're cooking several batches, you can also place several baking sheets in the oven.
Cook for 1 hour. You should see bubbles forming while cooking.
Make sure you do not open the oven while the sugar isn't dry, otherwise bubbles might collapse.
When cooked, remove from the oven...
... and let cool before use.
