Add this recipe >Before starting this Burger Bun recipe, make sure you have organised all the necessary ingredients.
Place the flour and salt in the mixer recipient.
Add the castor sugar...
... and combine all 3 ingredients with a spatula.
Combine the water and milk.
Add the crumbled yeast...
... and combine well with a spoon. If you can't find fresh yeast, replace with 16 grams of dry yeast.
Cover with a lid and set aside for 10 minutes at room temperature.
Place the bowl in the stand mixer fitted with the dough hook.
Add the water, milk and yeast mixture...
... followed immediately by the egg, beaten beforehand.
When the egg is completely incorporated, add the soft butter.
Knead for a good 5 minutes at high speed...
... until the dough comes away from the sides of the bowl.
Drizzle flour over the surface of the pastry, which is a little sticky...
Transfer into a mixing bowl.
Cover with cling film.
Leave to rise at room temperature for 2 hours..
Remove the cling film carefully, detaching the dough with your fingers as you go.
Scrape the dough from the sides of the bowl.
Gather the dough into a bowl and weigh. Divide the dough into 8 equal portions.
Shape the each portion into a round ball with your hand...
... and arrange them on a Silpat baking mat, allowing enough space between them.
Leave to prove for one hour at room temperature. Use a timer!
This is the result after one hour.
Glaze the surface of the buns with eggwash, using a brush. Make sure the buns don't collapse.
Sprinkle caramelized sesame seeds over the buns (or any other seeds).
Bake in a fan-assisted oven preheated at 200°C (gas 6)...
... between 10 and 12 minutes. Remove from the oven and leave to cool. These delicious burger buns are super soft and fluffy.
