Tools for When making sweet preparations (Bombe batter, meringue...) including cooked sugar.:

  • sugar pan
  • brush
  • electronic thermometer

Method for How to cook sugar:

Prepare all the ingredients.

Place sugar into a clean copper sugar pan.

Add a little bit of water. Quantity of water is not so important. You need enough to be able to humidify sugar.

Place the sugar pan on medium heat and bring sugar to a boil.

Monitor the temperature using a digital thermometer.

Clean the sides of the sugar pan with a wet brush...

...to avoid the eventual sugar splashes burning on the sides.

Continue cooking until finished according to the desired recipe.
