Break the eggs in a bowl. Add the icing sugar...
...almond powder...
...and flour.
Whisk using the electric beater on maximum speed...
... for 3 minutes.
Beat the egg whites firm and thicken with sugar.
Delicately incorporate them to the preparation that was previousely obtained.
Mix using a rubber spatula.
Add the melted butter last.
Mix.
Take a déco'calq sheet with the design of your choice and place it on a pastry sheet.
Dress the biscuit joconde dough on the sheet.
Spread the dough using a metal spatula...
...and bake in hot oven, at 200°C for 6 to 8 minutes.
When the biscuit is browned, remove from the oven...
...and leave to cool on a grid. Flip the biscuit on the working surface. Remove the "Déco'calq" paper. The design remains imprinted on the biscuit.
