Peel the sweet potatoes with a knife.
Cut the sweet potatoes into large cubes...
...as shown in the photo.
Place these sweet potato cubes into a saucepan...
...and pour cold water until they are immersed.
Add the coarse salt.
Heat the water with the sweet potatoes, starting from cold. Bring to a boil and cook for 20 to 25 minutes. The cooking time may vary depending on the size of the sweet potato cubes.
To check if they are cooked, insert a knife into the center of the cubes; it should slide in easily.
Strain the cooked sweet potatoes in a colander.
Pour the whipping cream into a saucepan...
...and bring to a boil. Then remove the saucepan from the heat.
Place the sweet potato pieces into a bowl and mix with a hand blender.
Add some whipping cream while continuing to blend...
...until fully incorporated.
Add more cream...
...and continue blending.
Add the rest of the cream...
...and blend for a while until you get a smooth purée.
Add the butter...
...and blend again.
Adjust the seasoning if needed with freshly ground pepper...
...and fine salt.
Give it one last blend with the hand blender.
Don't hesitate to taste the mash to adjust the seasoning.
Smooth the surface of the purée with a spatula.
This delicious sweet potato mash can be stored in the fridge if prepared in advance, or set aside if served immediately. Enjoy!
