Using a brush, slightly brush the bottom of the mold with chocolate to fill decoration details.
Pour the melted coating chocolate in the prints.
Spread the chocolate well using a metal spatula. Leave to harden.
Delicately scrape the sides of the mold to even out the chocolates...
...and remove any excess drippings.
To unmold, flip the sheet on the work surface. If the melting process was done correctly, the chocolates will drop out by themselves...
...and will have a nice glossy and uniform finish. If white stains appear on the chocolate, it means that the various stages of melting were not strictly followed.
Place the chocolate half back in its mold. Using a torch, heat the surface of these chocolates quickly ...
...and stick to the other half by adjusting the edges well.
Leave to harden. (Some chocolates will not need to be assembled this way. It will depend on selected shapes. Here these are round chocolates that required this assembly procedure).
Unmold and store in a cool and dry place.
