Tuile dough recipe:
80g flour T55
100g egg whites
Pinch of salt
50g melted butter
Water-soluble colouring of your choice, or vegetable juice (carrot, beetroot, spinach, parsley...)
Whisk together flour, egg whites, salt, and cooled melted butter until well combined.
Fill the mold cavities with the batter, ensuring it spreads evenly. Use a cranked spatula to achieve uniformity.
Scrape off excess batter to prevent overflow.
Bake in a preheated fan-assisted oven at 170°C (gas mark 4) for 7 minutes.
Remove from the oven and release the tuiles immediately.
Store in an airtight container until ready to use.
