Recipe for tuile dough:
80g T55 flour
100g egg whites
1 pinch of salt
50g melted butter
Water-soluble colouring powder or liquid of your choice or vegetable juice (carrot, beetroot, spinach, parsley, etc.)
Whisk the flour with the egg whites, salt, and melted butter (once cooled).
Line the mould cavities with this mixture, ensuring it fills the gaps. Use an angled spatula for precision.
Remove any excess pastry by scraping the surface of the silicone mould to prevent spillage.
Bake in a preheated oven at 170°C, preferably in a fan oven, for 7 minutes.
Release as soon as it comes out of the oven.
Store in an airtight container until ready to use.
