Aristid 42% milk chocolate perlines are particularly suited for pastry creations, as well as chocolate making, moulding, and mousses.
Tempering curve: Melting (48°C), Crystallization (29.3/29.5°C), Working T3 (29.5/30°C)

• Storage: Close the lid tightly to preserve its properties and store between 16° and 18°C, away from heat and humidity.
