Zéphyr white chocolate is renowned for its very smooth texture and low sugar content, featuring a powerful whole milk taste and 100% pure cocoa butter. The unique "pistole" shape (+/- 2g) offers convenient dosing and facilitates faster melting for simplified crystallisation. After use, simply reseal the sachet to protect the product from spoilage.
For quick and easy crystallisation:
Melt the couverture at 40°C in a tempering pan or an oven. Once melted, incorporate about one-third of the unmelted couverture. Stir with a spatula to reduce the temperature to 26°C, the optimal temperature for using the couverture (keep the temperature steady at 28°C throughout use). In a microwave oven, use a suitable container and follow the same method. This method is swift but requires careful attention during melting.
