Hukambi 53% ombré couverture chocolate is a surprising blend of Brazilian cocoa, French milk and Madagascar vanilla.
Introduced by Valrhona as the perfect balance between light and darkness, this ombré couverture is round and powerful at the same time.
The first ombré couverture of its kind offers a reduced sweetness, subtle bitterness and notes of fruit and biscuits.
Valrhona collaborated with the Libânio plantation in Brazil's Mata Atlantica, an area which has been named a biosphere reserve by UNESCO.
This company uses the "cabruca" system, which allows taller trees such as fruit trees to grow above smaller varieties such as cacao trees.

Uses:
Hukambi 53% ombré chocolate couverture is praised particularly for the preparation of chocolate bars, crémeux and ganache.
It is also recommended for the preparation of mousse, ice cream, sorbet or moulding applications.
Hukambi chocolate pairs well with prunes, quince, green pepper or smoked salt.
