Itakuja 55% dark chocolate is a Pure Origin Brazil chocolate obtained after a double fermentation of the beans, just like the Kidavoa milk version.
It reveals the power of cocoa grown in Brazil and the slight acidity of passion fruit.
Double fermentation consists of following the classic process for the first stage, then, for the second, introducing fresh fruit pulp harvested locally.
This Itakuja blanket is the result of the meticulous work of the Libânio plantation, located in the Mata Atlantica, classified as a Biosphere Reserve by UNESCO.
Itakuja refers to Itacare, a town close to the plantation, and mara kuja, meaning passion fruit in Tupi, the language spoken by the natives.
