Kalingo dark chocolate draws all its flavors from the island of Grenada, located in the extreme south of the Antilles.
Its beans are grown in the middle of cinnamon roots, nutmeg and exotic fruits, which gives it this profile that is so rich and at the same time so sweet.
The first notes reveal ripe fruits, finishing with a note of vanilla pods and the freshness of camphor, blown by the Atlantic winds.
Kalingo pays homage to one of the Native American people who once lived on this island: Kalinago.
The island of Grenada is known for the quality of its nutmeg and also for its cocoa culture!
Valrhona therefore naturally selected it to showcase its treasures.
The beans were once polished by foot in large copper basins during traditional dances, a bit like the vines...
The technique has today evolved, however, these beans are still grown on very small plots of one or two hectares to offer a Grand Cru, pure origin, rare and unique.
Applications:
Kalingo beans are perfect for chocolate bars, coatings, ganaches, creams, ice creams and sorbets.
It is a versatile chocolate with good fluidity.
It goes particularly well with apricot, coconut, peanut, vanilla, licorice, passion fruit, chili pepper, ginger, honey or salted butter.
