Kidavoa 50% milk chocolate is a Pure Origin Madagascar chocolate obtained after double fermentation of the beans.
It is strong in cocoa and then suggests fruity notes, particularly banana, spicy and malty.
Double fermentation consists of following the classic process for the first stage, then, for the second, introducing fresh fruit pulp harvested locally.
This is what the Millot plantation in Madagascar, a Valrhona partner for more than twenty years, did for Kidavoa milk chocolate by adding a little banana to the recipe.
