Curry is a complex, highly aromatic blend of spices and herbs native to India. The word "curry" comes from the Tamil word "kari," meaning "sauce."
The first printed recipe, dating back to 1747, contained only pepper and coriander. Thanks to Indian workers in the British sugar industry, the blend spread to the Caribbean in the 19th century, and then to the rest of the world.

Spices often need a carrier to release their flavour, and fats are ideal for diffusing the aromas. We recommend infusing curry with meat broths, cream, coconut milk, sauces, oil, or butter.
