Iranian saffron, Negin variety, first grade.
Harvested in the Ispahan region, the Negin variety consists of the top part of the stigma and the most aromatic with its characteristic red colour.
Between 70 and 80 pistil heads are necessary for 1 gram of this exceptional saffron.
The quality and colouring properties of this saffron are tested every year following the 'milk' ritual: 1 gram saffron colours between 500 and 600 litres of milk.
