Clarance's traditional mustard is made from seeds grown, harvested, and ground on-site with a stone mill at the family farm. These seeds come from the Brassica Juncea plant, which can reach heights of 1.75 to 2 meters. Flowering begins in May, with the harvest taking place during the summer. This variety imparts a flavor that is both delicate and powerful to all the mustards in the range. Combined with delicious cider vinegar and white wine from the Sauvignon Val de Loire producer, it creates an exceptional traditional mustard.
