Found in West Africa, grains of paradise - also called melegueta pepper - is mostly used as a substitute or complement to pepper.
Grains of paradise deliver a pepper-like heat with fragrant aromas of cardamom and lemon.

This little known spice pairs well with stews, tajines, sauce dishes, white poultry and seafood.
On the sweet side, grains of paradise are a great addition to crème brûlée, chocolate dessert and poached pears.
