It undergoes a double fermentation: alcoholic fermentation followed by acetic fermentation.
The yeasts naturally present in the fruit juice transform the sugar into alcohol, thus becoming wine.
Then, the bacteria naturally present in the fruit wine transform the alcohol into vinegar.
The resulting vinegar is bottled and no additives are added.

Uses:
In salads for seasoning (a treat with virgin coconut or hazelnut oil), in marinades for white meats, fish or vegetables, or combined with a little honey in fruit salads.
