Instructions:
1. Dissolve the contents of bag number 2 in warm water (37°C).
2. Pour the contents of bag number 1 in the stand mixer bowl. Add the water and yeast mix, the egg and the warm milk.
3. Combine using the dough hook until homogeneous, then add the softened butter.
4. Knead at medium speed until the dough comes away from the sides of the bowl. This should take 10 minutes.
5. Transfer the dough into a floured bowl. Cover the bowl with cling film and leave to prove for 2 hours at 28°C in a proofing chamber or in a warm oven (30°C maximum).
6. Kock the dough back then divide the dough into 8 equal portions.
7. Shape the portions into balls and arrange them over 2 baking sheets lined with baking mats.
8. Leave to rise 1 hour for 28°C.
9. Brush some egg wash over the surface of the buns and sprinkle with the contents of bag number 3.
10. Cook for 12 minutes in a fan-assisted oven at 200°C.
