Instructions:
1. Pour the cake mix into a bowl.
2. Add the zest of a lemon (preferably organic).
3. Add the whole eggs at room temperature, the dark rum and whipping cream.
4. Combine in the stand mixer until homogeneous, then add the melted butter (warm or at room temperature).
5. Transfer the preparation into the cake mould (22cm), slightly greased beforehand.
6. Bake in a fan-assisted oven preheated to 150°C (gas 2) for 50 minutes.
7. Lemon drizzle icing: Whisk the icing sugar, the juice of one lemon and the zest of 1/4 lemon.
8. Take the cake out of the oven and increase the temperature up to 200°C (gas 6). Leave the cake to cool for 5 minutes then release from the mould onto a cooling rack.
9. Pour the lemon icing over the hot cake (use a brush over the sides).
10. Return the cake to the hot oven for 2 minutes max.
11. Leave to cool at room temperature until the lemon drizzle icing has set.
