It also goes well in savoury recipes such as classic croque monsieur with béchamel sauce or simply in toasted sandwiches.
Instructions:
1. Dissolve the contents of bag number 2 in warm water
2. Pour the ingredients in bag number 1 in your stand mixer bowl. Add the warm milk, the water and yeast mix as well as the melted butter (cooled down). Combine with the dough hook at high speed for 8 to 10 minutes.
3. Shape the dough into a ball at the bottom of the bowl, then cover with a cloth and leave to rise for 30 minutes in a warm room (28°C). Ideally, use a proofing chamber.
4. Knock the dough back and transfer the dough onto a floured surface. Shape the dough to the dimensions of a bread pan (27 x 10cm). Arrange the dough into the greased pan.
5. Close the mould with the lid, leaving an opening of 1/4. Leave to prove between 40 and 60 minutes, until the dough almost reaches the lid. Close the lid completely.
6. Preheat the oven to 220°C (gas 7), then reduce to 180°C (gas 6) and bake between 40 and 45 minutes.
7. Remove the lid. The bread should leave no gaps inside the mould.
8. Release from the pan and leave to cool on a rack.
