This 100% pistachio paste is made by hand in France, in the Basque Country, by a family business that is particularly attached to natural products. It contains no additives and provides a pure pistachio flavour.
The fruit is shelled and then roasted to enhance its flavour. They are then ground and refined to produce a smooth, naturally coloured paste that is easy to work with. Pistachios are rich in iron, magnesium, fibre, and nutrients. It contains over 30 vitamins, including vitamin E.
This pistachio paste can be used in mainly sweet recipes, but can also be imagined in other savoury or bakery recipes.
Applications:
The average dose is 80 to 100 g per litre of preparation, but that depends on the recipe and your personal taste. Add to cake batters, brioche, pan-fried vegetables or, why not, a pasta dish!
Recipe for about 15 mini pistachio and cherry cakes:
125 g almond powder
125 g icing sugar
125 g softened butter
60 g pistachio paste
3 whole eggs
100 g pitted cherries
Preheat the oven to 160°C.
Beat the almond powder, icing sugar, and softened butter with a mixer.
When the mixture is sandy, add the pistachio paste, then the eggs.
Beat again until smooth and add the halved pitted cherries.
Fill the moulds to within 1/2 cm of the edge.
Bake at 160°C for 12 to 15 minutes.
