The cocoa beans are sourced from the Mateza Cooperative in the Sambirano Valley, northwest Madagascar, and are gently roasted to preserve their natural aromas.
The pistole format (approx. 2g per piece) ensures precise dosing, faster melting, and simplified crystallisation for effortless use.
Tempering curve: Melting (50/55°C), Crystallisation (28/29°C), Working (31/32°C).
Perfect pairings: raspberry, papaya, fig, orange zest, jasmine, rose, cinnamon, roasted hazelnut, honey, ginger, basil, sake, amontillado sherry.
Note: Chocolate is sensitive to heat during transport. In hot weather, it may melt in the parcel and solidify into a block. This does not affect its quality.
