The Ecuador 80% dark chocolate is made from pure origin cocoa beans harvested from 9 terroirs.
Marked by a slight bitterness, it also reveals vegetal notes and sweet spices.
It is part of the new "80% Confection" range with 3 other Pure Origin grands crus, without added cocoa butter, lecithin or vanilla.
Four origins, four completely different aromatic profiles and only two ingredients to bring intensity to all pastry or chocolate recipes!
As in other producing countries, Valrhona finances local projects to improve agricultural practices: pruning, fertilization, plot renovation, fermentation and drying methods. It also participates in the preservation of an ancestral and typical variety of Ecuador: "Nacional" cocoa.
Applications:
Ecuador 80% dark chocolate with bitter and vegetal notes is recommended for fillings: ganaches, creams, mousses, biscuits, soufflés or ice creams.
Tempering curve: Melting at 55-58°C, crystallisation at 28-29°C, working temperature at 31-32°C.
