Tonka bean powder is an economical choice as it is used in small quantities.
This bean is very fragrant, with a sweet almond flavor that is slightly spicy and smoky. Its enchanting aroma has notes of vanilla and caramel, making it a popular ingredient in desserts such as crème anglaise, crème brûlée, cakes, and chocolate.
It takes approximately 7 to 8 Tonka beans to make 10g of powder.
In cooking, just a small amount of ground Tonka bean (0.1g) is enough to add flavor to the entire dish. We recommend mixing the ground Tonka bean with a few grains of fine salt for even distribution. This trick is also used in baking, by replacing the salt with sugar.
