Applications:
Coeur de Vanille Bouquet can be added to a cake mix, melted butter, or during the heat reduction phase of a dairy preparation.
As a guide, the average dosage for a vanilla cream (custard, whipped cream, ganache) is 2 to 3g/L, 5g/L for biscuits or cake.
Custard recipe:
Heat the milk, clarify the eggs, and whiten the yolks with the sugar and cornstarch.
Whisk the egg yolks with the sugar and cornstarch and stir into the hot milk.
Add the Coeur de Vanille Bouquet when the cream has finished cooling.
