Tips for opening scallops:
Hold the scallop firmly, domed side down.
Insert the end of the knife between the 2 shells then lever.
Once opened, slide the blade as close as possible to the bottom of the curved part in order to cut the main muscle of the nut and separate it from the shell.
Gently seize the nut and its coral upwards in order to cook it.
