Add this recipe >Before starting this Fresh Fruit Salad recipe, make sure you have organised all the necessary ingredients.
On a chopping board, carve the watermelon to create a basket. Start by cutting the handle.
Scoop the seeds and flesh out, making sure the sides are thick enough...
... to withstand the weight of the fruits. Reserve in the fridge.
Using a sharp knife, cut the watermelon flesh into cubes. Skin the pineapple...
... cut it into quarters...
... and remove the central core.
Cut each quarter into pieces.
Peel each orange following its natural curve...
... and cut into segments.
Peel the kiwi fruits...
... and cut into pieces.
Peel the pears, then cut into cubes.
Peel the mango...
... then remove the core and cut the flesh into cubes.
Wash the strawberries, then remove the stems and cut into quarters.
Add the blueberries...
... and the redcurrants, once you've discarded the sprigs.
In a large bowl, combine all the fruits. Add the grapes.
Add the sliced banana last. Sprinkle the banana with lemon juice to avoid oxidation.
Add the cane sugar syrup, vanilla sugar...
... and the rum.
Squeeze two oranges...
... and pour the juice over the fruits.
Using herb scissors, chop a few mint leaves and add to the bowl.
Using salad servers, gently combine all the ingredients. Reserve in the fridge.
When ready to serve, pour the fruit salad into the watermelon basket. Finish by arranging a small sprig of redcurrants on top and serve immediately.
