Add this recipe >To make this roasted cauliflower with feta, garlic and lemon sauce, start by preparing all the ingredients for the roasted cauliflower.
Roasted cauliflower: Remove the cauliflower leaves using a knife.
Remove the core without digging too deep. The cauliflower florets should not fall apart. Place the cauliflower flat on a chopping board and cut into uniform slices at least 2cm thick.
Pour a little olive oil on a baking tray and arrange the cauliflower slices...
...as shown in the photo.
Drizzle extra virgin olive oil over the cauliflower slices.
Get some Cajun spice mix...
...and sprinkle over the cauliflower. Season with fine salt and freshly ground pepper.
Add one or two knobs of butter on each cauliflower slice.
This is what the result should look like.
Place the tray in a fan-assisted oven, preheated to 180°C, and bake for 20 minutes.
Remove the tray from the oven.
Using two large spatulas...
...carefully flip one cauliflower slice to avoid breaking it (one spatula underneath, one spatula on top).
Repeat the operation with all cauliflower slices.
Sprinkle again with fine salt, freshly ground pepper, and Cajun spices.
Place the tray back in the oven and bake for another 20 minutes at 180°C.
Remove the tray from the oven and set aside (keep warm if serving soon).
Feta sauce with garlic and lemon: Prepare all the ingredients.
Pour the Greek yogurt into a mixing bowl.
Add the feta (crumbled with your fingers).
Using a Microplane Classic zester-grater, grate two garlic cloves over the bowl and add the zest of half a lemon.
Add the honey or agave syrup.
Add the olive oil...
...and whisk vigorously.
Add the sesame paste, fine salt, and freshly ground pepper...
...and whisk again.
For a perfectly smooth sauce, pour the mixture into a blender...
...and mix to fully break down the feta, which tends to remain in chunks.
Transfer the feta, garlic & lemon sauce into a serving dish.
This is what the result should look like.
Finish: Place a large spoonful of feta, garlic & lemon sauce on the plate.
Gently grab one of the warm cauliflower slices with the chocolate spatula...
...and arrange it carefully on top of the sauce.
I used crushed paprika for a nice finish.
Lightly sprinkle some paprika over the sauce and cauliflower...
...as shown in the photo.
Chop some flat-leaf parsley leaves and sprinkle.
